We have enjoyed the Vision series published by Ignatius Press, and the Mary Fabyan Windeatt series published by TAN. Although they are now out of print, we especially liked the Daughters of St. Paul’s Encounter Books. Some favorites are:

We have enjoyed history books from the Catholic Textbook Project and highly recommend them. (From Sea to Shining Sea: The Story of America, All Ye Lands: Origins of World Cultures, etc.)
We've also loved the Landmark series history books. These were popular hardcover children’s books on individual historical figures and episodes, published in the 1950’s. They can be found in used book stores in original hardcover; they are also being reprinted in paperback. Some of our favorites are:
